ARUGULA SALADS (FOR 2)

Take 1: Arugula and Avocado
2-3 cups arugula
3 T rice wine vinegar
5 T olive oil
A perfect avocado

Cut avocado into bite size pieces. Place in bottom of large bowl. Measure out oil and vinegar and pour onto avocado. Set arugula leaves on top. Do NOT toss yet. Let rest for 15 minutes, Toss, salt and pepper and serve. Devine.

Take 2: Arugula and Maytag Blue Cheese
2-3 c arugula
3 T rice wine vinegar
5 T olive oil
1 oz Maytag blue cheese
Handful raw pecan halves
Handful of dried cranberries.

Cut blue cheese into bite size pieces. Place in bottom of large bowl. Add pecans and cranberries. Measure out oil and vinegar and pour onto cheese, nuts and berries. Set arugula leaves on top. Do NOT toss yet. Let rest for 15 minutes, Toss, salt and pepper and serve. Heavenly.

Take 3: Arugula and Radishes
2-3 cups arugula
3 T rice wine vinegar
5 T olive oil
3-5 sliced radishes (hot is OK, vinegar cuts the heat)

Place the radish slices in bottom of large bowl. Measure out oil and vinegar and pour onto radishes. Set arugula leaves on top. Do NOT toss yet. Let rest for 15 minutes, Toss, salt and pepper and serve. Ambrosia.
